Hot Bread Kitchen is a non-profit social enterprise that creates better lives for low-income women and their families. We launched in 2007 as a workforce development program and micro-enterprise development program whereparticipants learn the skills necessary to launch food businesses and achievemanagement track positions in food manufacturing. This is a fast-paced bakery and rentalkitchen facility that hosts up to 6 businesses per day and where thousands ofdollars in product is produced.
Job Description
We are looking for an individual with culinary, restaurant, and general sanitation experience to maintain a new bakery and commercial kitchen facility,maintenance background a plus. The Facilities Manager will oversee the kitchen and sanitation team and be responsible for keeping a clean and functioning space. The Facilities Manager will alsoensure that staff and program participants are working in optimum conditions bymaintaining and enforcing kitchen policies and may provide technicalassistance. Depending on qualifications,the Facilities Manager will also help guide culinary curriculum and delivertraining on food safety, equipment handling and recipe scale-up.
Specific Duties
Maintains safe, secure, and healthy workenvironment by establishing, following, and enforcing standards and procedures;complying with sanitation and federal, state, and local legal regulations;overseeing food preparation, safety, and security.
Ensures kitchen space is clean and sanitaryby sweeping floors and cleaning-up after clients who don’t meet requirements,including sanitizing equipment, storage areas, and emptying trash.
Monitors entry door, acts as point personfor all deliveries and pick-ups. Opensdoor during off hours and weekends. Receives deliveries, reorganize storageareas to accommodate deliveries, and practice industry standard inventoryrotation protocol.
Monitors walk-in storage area for misplaceditems, items left on the floor, and out-of-date products. Ensure that inventory is stored in correctareas.
Orders facility sanitation chemicals andequipment. Keeps chemical storage areaorganized and clean.Retrieves items from deep storage forbakery and administrative staff.
Recruits, trains, and schedules kitchensanitation and maintenance staff to meet the needs outlined above, withapproval of the CEO.
Manages the kitchenstaff tightly to meet the maintenance and service requirements of the facilitywhile controlling costs. May be requiredto cover sick and scheduled days off. Works with third party pest control agencyto ensure an infestation-free facility is kept.
Manages and schedules waste disposal.
Maintains culinary equipment by followingoperating instructions; instructs staff and clients in equipment use;troubleshoots breakdowns; maintains equipment supplies; performs preventivemaintenance; calls for repairs; evaluates new equipment and makesrecommendations of equipment purchases
Performs or oversees general mechanicalwork, including leaking pipes, greasing of chains, and installation of variousitems which may be nailed, screwed, or drilled into walls.
Acts as the authority on the operation ofall incubator and bakery equipment until staff has been properly trained. Responsible for successful start-up of newequipment purchased.
Facilitates smooth functioning of theincubator and bakery by acting as point person for all immediate on-site needs,including receiving deliveries, assisting in loading of delivery truck,responding to emergencies.
Achieves incubator’s operational objectivesenforcing policies and procedures. Depending on qualifications, may also deliver scheduled trainingsessions on specific kitchen-related topics.
