Dickson's Farmstand Meats is looking for an energetic, curious and organized person to run our cutting team.

Dickson’s Farmstand is a purveyor of a unique selection of artisanal meat and meat products. Our beef, lamb, pork, goat and poultry are sourced from local farms, hand-picked because of their commitment to producing natural, humanely-raised, high-quality and distinctive meat products. 

Dickson's is an exclusively whole-animal butcher shop, all breaking and retail cutting take place at our Chelsea Market location.

This is a fabulous opportunity for a professional meat cutter to lead a capable team in a faced paced, ideologically driven retail organization.

Candidate must have a minumum 2 years meat cutting experience in a retail or wholesale environment, be a very strong manager and have solid customer service skills.

Responsibilites Include :
  • Manage personnel in the cutting room to ensure consistently high levels of customer service and efficiency.
  • Maintain a clean, organized and stocked cutting room and walk-in.
  • Oversee special orders and holiday orders.
  • Run yield and cost analysis on cuts and prepared food items.
  • Shoot video/photos for website, social media and in store display.
  • Handle logistics for farmers/slaughterhouse.
  • Design and execute a consistent carcass evaluation system & provide our farmers.
  • Organize and teach classes.
  • Work closely with kitchen and front-of-house teams to ensure full integration of shop.
  • Oversee beef aging program.
  • Write/organize meat component for the coming book project (fall).
  • Continue work on Dickson's cut guide and training manual
  • Organize and run existing intern program
