Job description
Position Title: Breakfast Chef
Supervisor: Executive Chef
Employee Status: Seasonal, Full Time
Location: On-site (99 Inn Road, Shelburne, VT 05482)
Start & End Date: May 1st - October 31st (required onboarding & training beginning in late April)
Salary Range: $28 - $30/hour ($24 -$25/hour if living in free staff housing)
Schedule: 7 day operation; Typical schedule is 6am - 2pm and days worked depends on schedule and your availability
Housing: Free on-site housing available for this role however it will impact your base salary

Our restaurant plays a crucial role in this mission and you’ll be helping to provide thoughtfully sourced and prepared meals that allow anyone who is enjoying a meal with us to engage with the concepts of sustainability through their food.
What you’ll do
Operational Management:
- Support the Executive Chef in managing the operation of various Shelburne Farms food outlets, including the primary kitchen, event kitchen, farm cart, and remote catering.
- Maintain the integrity of the food served and the commitment to the farm's organizational mission.
- Run and supervise breakfast kitchen operations in the Executive Chef’s absence.
- Maintain a clean, organized, and efficient kitchen environment, adhering to all health and safety regulations.
- Maintain a targeted food cost through careful procurement of ingredients both on farm as well as sourcing from additional farm partners.
- Assess food portion size, visual appeal, taste, and temperature of items served.
- Plan, coordinate, and implement special events and holiday functions.
Team Leadership and Development:
- Support the team with hiring, training, mentoring, scheduling, and supervision of breakfast kitchen team members, including stewards and line cooks.
- Lead the team in preparing and serving delicious, nutritious, and sustainably sourced breakfast meals for guests.
- Adapt to support and train team members in a teaching kitchen with varying skill levels.
- Inform all breakfast kitchen staff of daily forecasts, customer counts, special requests, and events to adequately prepare for service.
Culinary Innovation and Sustainability:
- Highlight Shelburne Farms products such as maple syrup, vegetables, fruits, cheese, and pastured meat and eggs.
- Collaborate with the Executive Chef and Chef de Cuisine to design a daily breakfast menu that supports the educational goals of Shelburne Farms, focusing on the connections between food, farming practices, and environmental impact.
- Lead the kitchen through sustainable culinary practices, including reducing food waste, composting, and utilizing every part of an ingredient.
Core Qualifications
- Minimum of four years of line cooking experience and two years of kitchen leadership.
- Excellent knife skills and extensive understanding of various cooking techniques.
- Experience curating menus with considerations of food allergies and special dietary requirements.
- A working knowledge of the Google/Microsoft Office suite of programs (Sheets, Docs, Excel, etc.) a plus.
Additional Valued Qualifications
- Work well under pressure and strive to motivate others.
A passion for farm to table food and hospitality.
- Experience using systems and tools such as Google Workspace (all Google Suite tools), event planning, point of sale, dining and room reservations.
Work Environment & Physical Demands
- Being active for extended periods of time and working in settings with limited air conditioned work environments depending on the location.
- Fast-paced work environment.
- Carrying and moving items up/down stairs and over uneven terrain, weighing up to 40 lbs.
