About the Position
We are looking to add a Lead Butcher to our team. This is a salaried and managerial position that will work closely with our Store Managers and Evans Meats and Seafood leadership to
ensure successful daily operation of The Son of a Butcher. This position oversees and maintains daily retail sales in the shop as well as meat fabrication, the production of sausages,
sandwiches and prepared foods. The Lead Butcher must be highly organized and self-motivated. Culinary experience and expertise are needed to use our meat, seafood, and specialty items to create prepared foods and products for our customers.
Desired Qualifications:
-Minimum 3 years' experience in the food service industry as a Chef and/or specializing in meat fabrication, whole animal butchery, sausage making, and/or retail meat sales.
-Thorough understanding of Hospitality and Service.
-Must understand and practice all food safety and sanitation practices to a high level.
-Management experience strongly preferred. Applicant must be able to lead a small team in a respectful and high-volume environment.
-Must have knowledge of and the ability to maintain cost and yield analysis of meat, seafood, retail items and prepared foods.
-Must be able to maintain the existing quality and standards of our butcher shop while also adding value in the form of creative input and professional growth as a part of our team.
Responsibilities and Expectations:
-Working closely with our Store Manager to write schedules and order all food, retail items, and products necessary for the shop to run smoothly.
-Must be willing and able to work any position in the shop as needed during a busy service. Overseeing and stocking the retail meat, seafood, and specialty counters with Evans Meats & Seafood product.
-Maintaining a consistent production of sausages, sandwiches, prepared foods, and goods available in the shop.
-Must work well with a small team and be able to teach team members skills and tasks pertaining to butchery, cooking, and hospitality.
-Lead Butcher will be expected to cultivate a professional relationship with our valued and consistent customers through daily service behind the counter as well as completion of
special orders.
-Holidays are high volume and imperative for our shop's success. You will be responsible for organizing, pricing, and performing Holiday Presales for Christmas, Thanksgiving, New Years, Valentine's, Easter, July 4th and more.
-Lead Butcher will work closely with Evans Meats leadership team to maintain quality standards and profitability by dialing in ordering practices, utilizing products creatively and making price adjustments to products as the market changes.
