Tenth House, a boutique restaurant in Friday Harbor, WA, is seeking a talented and dedicated Sous Chef to join our dynamic team. At Tenth House, we pride ourselves on creating exceptional dining experiences inspired by the bounty of the Pacific Northwest, utilizing sustainable, locally sourced, and seasonal ingredients. As Sous Chef, you will work directly with the Executive Chef/Owner, executing established menus while upholding the high standards of our kitchen.
Our restaurant evolves with the seasons: boutique pasta dishes and intimate, community-driven dining in the winter, and wood-fired pizzas with vibrant, locally sourced ingredients during the high-energy, high-volume summer tourist months. Key Responsibilities:
Execute established menus created by the Executive Chef/Owner with precision and consistency, adapting to the seasonal focus of the menu.
Lead kitchen operations in the absence of the Executive Chef/Owner, including line cooking, expediting, and managing staff.
Oversee prep, organization, and cleanliness of the kitchen, ensuring adherence to all sanitation, safety, and food-handling standards.
Order ingredients and supplies, maintain vendor relationships, and ensure inventory accuracy and quality.
Maintain a clean, organized kitchen while setting the standard for a safe and efficient work environment.
Control ingredient use, portioning, and waste to meet food cost benchmarks while delivering exceptional quality.
Train and mentor cooks and dishwashers, fostering a positive and professional kitchen culture.
Adapt to the seasonal shift in volume, maintaining consistency and quality during the busy summer months and fostering a more intimate dining experience in the winter.
Manage day-to-day operations, including scheduling, ordering, and preparation for services and events.
Qualifications:
3-5 years of professional culinary experience, with at least 2 years in a supervisory role.
Expertise in cooking techniques, knife skills, and kitchen operations.
Knowledge and passion for sustainability, seasonality, and local ingredients.
Strong organizational skills with an attention to detail and cleanliness.
Experience managing vendor relationships and placing orders with multiple suppliers.
Proven ability to work efficiently under pressure while maintaining high standards of quality.
A positive, collaborative attitude and openness to feedback.
Excellent communication and problem-solving skills.
Availability to work weekends, including Friday nights, and flexibility to adapt to evolving schedules.
