Job Title: Chef de Cuisine
Reports to: Restaurant Manager
Location: American Flatbread, Waitsfield, Vermont
Job Purpose:
To craft good, flavorful, and nutritious food that brings both joy and health to our guests. This position will provide leadership and supervision for the kitchen staff, ensuring they have the support, tools, and resources necessary to deliver high-quality food with consistent presentation and taste.
Key Responsibilities:
- Develop a quarterly calendar of rotating specials featuring weekly flatbreads, salads, and small plates.
- Collaborate closely with the garden manager to incorporate fresh, seasonal produce into the restaurant menu.
- Create and oversee the prep list to ensure accurate information is available before each shift.
- Order and inventory all food supplies, maintaining strong relationships with local farmers and purveyors.
- Master all American Flatbread cuisine procedures, recipes, and techniques, and train others in their use, including vegetable prep, meat fabrication, sauces, and other key tasks.
- Schedule and oversee the prep crew and back-of-house staff; participate in hiring, training, and scheduling.
- Maintain open communication with the Restaurant Manager, addressing staffing challenges, inventory shortages, or other issues with timely solutions.
- Manage food costs, keeping them within established budgetary limits.
- Ensure the kitchen and walk-in areas are clean, organized, and ready for the next shift.
- Understand the full scope of the shift and how it contributes to the smooth operation of the restaurant and company goals.
- Find reasonable, timely solutions to unexpected challenges during service.
- Be knowledgeable of and proficient in all back-of-house roles, with the ability to step into any position when needed.
- Ensure proper food handling and sanitation procedures are strictly followed.
- Receive deliveries according to company protocol.
- Attend weekly and monthly meetings as required.
- Uphold all standards, procedures, and policies of American Flatbread, as well as health and safety regulations.
- Foster a positive environment for both staff and guests, contributing to a team-oriented, respectful workplace.
- Model exemplary hospitality that exceeds guest expectations.
- Serve the most flavorful, healthy, organic, and sustainably sourced food to our guests.
- Perform other related duties as assigned.
Qualifications & Skills:
- Passion for creating flavorful and nutritious food.
- 5+ years of experience in a restaurant environment, preferably in a farm-to-table setting.
- Strong knowledge of seasonal ingredients and local food systems.
- Excellent ability to follow recipes and adapt to direction or feedback.
- Willingness to assist with all aspects of kitchen operations, including cleaning.
- Proficiency in basic food handling and sanitation procedures.
- Exceptional knife skills and familiarity with kitchen equipment and techniques.
- Strong communication skills, especially during high-pressure situations.
- Patience, attention to detail, and a commitment to follow-through.
- A strong work ethic and belief in American Flatbread's mission and values.
- Ability to provide constructive feedback and participate actively in team discussions.
What We Offer:
Competitive salary: $70,000-$80,000 per year, based on experience.
Full-time, exempt position (35-45 hours per week).
Two weeks of paid time off.
401k after 6 months with 1% match
