Job description

The Catering Chef oversees the kitchen staff, training them to prepare menu items while upholding portioning and plating standards. You will also assist with menu development for each event, ensuring our kitchen is sufficiently staffed and stocked. You must enforce a high standard of quality at all times during food preparation as well as equipment sanitization.

Duties and Responsibilities

• Assist with menu development
• Execute onsite, offsite and Swan Family of Restaurant events & tasting events
• Train and oversee kitchen staff on how to prepare menu items
• Train staff to execute events
• Conduct quarterly employee evaluations with staff
• Uphold plating, technique and portioning standards
• Plan for event staffing needs (Writing schedules/ communication)
• Correspondence with Event coordinators (SFOR/Arbor)
• Manage Pearsons catering initiatives and delegate tasks when needed
• Order ingredients and maintain kitchen inventory
• Update and manage recipes
• Enforce and create any and all SOPs (standard operating procedures)
• Oversee kitchen efficiencies and maintain food & equipment budget
• Maintain weekly and monthly cost reports
• Establish and maintain business relationships (vendors, coordinators, ect.)
• Contribute and manage decisions that save the business money
• Assist with overseeing of Pearsons Catering operations  
• Maintain and exude a team player mentality at all time

 

This Position reports to the Director of Culinary Operations
Requirements and Qualifications

• Degree in culinary arts strongly preferred
• Sous chef experience (1-2 years)
• Management experience (2-3yrs)
• Catering experience required
• Food handler card or certificate
• Understanding of IT tools (Scheduling software, Microsoft Excel/Word)
• Organizational and time management skills

Compensation

this position is: hourly, varies DOE, $25.00 - $30.00
