Capay Mills mills and sells flour with purpose. Our mission is to revitalize local grain economies by bringing fresh-milled heritage whole grains and flours to bakers, chefs, distillers and brewers throughout California (and beyond). Our goal has been to rekindle the traditional role of millers as connectors between producers and consumers, by bringing the unique character, nutrition and environmental benefits of locally grown, heirloom whole grains to market. Our flours are milled from grain grown by ourselves and neighboring farmers, following organic, sustainable practices and milled to order on European stone mills in Esparto, Yolo County. We connect with our community of wholesale and retail customers through farmers markets, specialty grocers, and through our online store.

Production AssociateDescription:
Are you interested in resilient, vibrant, nutritious and equitable local food economies? Do you like working with your hands as much as with your head? Are you comfortable taking responsibility and working with minimal supervision? Are you passionate about quality and attention to detail?
If so, we are looking for a creative, hard-working, professionally-minded associate to be responsible for day to day production and order fulfillment at our artisan flour mill in Esparto, Yolo County. You'll start by working around 20 hours a week under the supervision of our milling supervisor, learning how to schedule the weeks production, track stock levels, mill a variety of locally grown grains into wholegrain flours, and then packaging and expediting delivery to both wholesale and retail customers.
We are a growing operation, milling for a number of California school districts as well as wholesale accounts, in addition to direct-to-consumer sales through our website and farmer's markets. We are pursuing a larger production space between Esparto and Woodland, where we hope to relocate before the year is out. As our production capacity and sales grow, we anticipate this position to grow to a full 40 hours weekly.
Work at the mill involves:
- Daily production planning based on continuous order updates

Organizing workflow and raw material needs based on the production worksheet

Operating milling equipment to ensure product quality, food safety, correct operation and regular maintenance

Packaging milled flour for retail inventory as well as online and wholesale orders

Tracking individual orders from order through shipping and fulfillment

Occasional deliveries as far as the San Francisco Bay Area and Sacramento region using a company vehicle

Maintaining a weekly inventory of raw materials and consumable items

Daily cleaning of production areas and compliance with all applicable food safety and good manufacturing regulations

Communication with owner and sales associate to review operations, sales, material supply and equipment maintenance

Interest and willingness to assist with field work involving planting, harvest, and post-harvest grain processing on a seasonal basis
Requirements for the position:

Current California driver’s license and insurance, own vehicle

Ability to lift and carry up to 60 lbs.

Tolerance for working in a dusty and loud environment (breathing and hearing protection provided)

No allergies to cereal grains, corn or other foods we mill

Willingness to pursue food safety certification (paid by Capay Mills) as required

Ability to work up to 8 hour shifts on your feet, in a physically demanding environment

Detail-oriented and able to independently create workflows to meet production schedules
- Initiative to work independently creatively to meet production and quality targets
- Ability to set a regular work schedule (currently 20-30 hours weekly), expanding to 40 hours weekly within 6 months
The position starts at 20-30 hours weekly, but we anticipate it growing to a full-time (40 hour) position within 6-8 months of our relocation. Until the position becomes full-time, you will have the flexibility to set your own schedule.
