Job description

JOB OPEN UNTIL FILLED

The Sous Chef is a full-time position assisting the Chef with managing the small kitchen team as well as preparing delicious meals for the Lodge guests and staff. The farm-to-table cuisine includes produce from the Island’s organic garden as well as fresh ingredients from other local farms, producers, and local fishermen. The position requires that the successful applicant live on the island. Housing, utilities, and meals are provided as part of the compensation package. Due to our unique situation and limited housing we are unable to accommodate family members or pets on the island.

Responsibilities and Duties

  • Preparation and presentation of high quality, great tasting meals for up to 32 guests and 25 staff members. Position works a varied schedule of breakfast, lunch, and dinner shifts.
  • Assist and support Executive Chef with leadership of kitchen staff and operations.
  • Proper food storage, cleanliness, safe food practices and adherence to County Health Dept standards.
  • Assist with ordering and maintaining inventory for all food and beverage products.
  • Assist the Executive Chef with creating seasonal menus to utilize items grown in the island’s organic garden and incorporating “signature” in-house items.
  • Cook from scratch and use minimal prepackaged items.
  • Due to the intimate nature of the Lodge operation, all kitchen staff work as a team and share responsibility for maintaining a clean and organized workspace, sharing workspace, dishwashing, and for ensuring overall kitchen organization and cleanliness during the shift.

Skills & Traits

  • Ability to prepare delicious, healthy meals from scratch
  • Solid foundation in special diets including vegan, vegetarian, gluten free, and working with allergens.
  • Ability to speak with guests and staff in a friendly and professional manner
  • Ability to teach and mentor staff
  • Willingness to learn and a positive attitude

Job Requirements

  • A minimum of 2 years of practical hands-on experience in a fine dining or hotel kitchen
  • Culinary degree a plus
  • High school diploma or equivalent
  • food safety certification or willingness to acquire
  • Ability to live on the island (We provide staff housing but are unable to accommodate pets and non-employees)
  • Applicants will undergo a basic background check and drug test. Findings do not automatically disqualify anyone, but rather provide a starting point for discussion.

Compensation
