Left Bank Butchery is a whole animal butcher shop located in the heart of Saxapahaw, NC. Our butcher shop is built on the foundations of supporting local agriculture, providing healthy food for our community, as well as educating and engaging our customers in the many aspects of sustainable farming, whole animal butchery, and how to cook our various cuts. Whole-animal means we take in whole pigs, cows, and lambs, and cut-to-order on a weekly basis. With this nose-to-tail approach, we can offer a wide range of fresh cuts, fresh sausages, smoked and cured meats, frozen products, stocks and soups, and more. All of our animals come from three local farms, all of whom we have dynamic relationships with. Lastly, our shop is located in a vibrant and quirky village that is passionate about good food and agriculture. Our guess is that the person who will enjoy this position will also enjoy engaging with our larger Saxapahaw community!
Job description
We are looking for a culinary professional(s) (possibly two job openings) who can seamlessly swing to the front of the shop to help customers. We are looking for someone that takes pride in developing consistency and efficiency in butchery tasks, and also wants to contribute to the creative task of utilizing whole animals.
We are a whole animal butcher shop that is intimately involved with the farms we work with. We're the "middleman," bringing the beautifully raised meat to our amazing customers (yes, they really are amazing folks). We have a really diverse group of customers- from crazy foodies, to homesteaders, to overwhelmed parents, to cooking novices- and everything in between. We try to create cuts and food for all of these folks. Someone who will enjoy working at the shop will be as excited as we are to work with our whole community.
We are a super small shop that brings in a surprising number of animals. And we're pretty egalitarian around here- we don't have roles as defined as most shops. Everyone is expected to be awesome with customers, to create charcuterie, to know how to clean all cuts for the case, and then to help merchandise and sell our products. Ultimately the mission of the shop is to figure out how to most creatively, efficiently, and smartly utilize and sell a whole animal- and everyone on the team is expected to be part of this mission.
This position is not designed to include whole animal breaking - although depending on the knowledge/experience of this new hire and future shifts in the needs of the shop, it could evolve in that direction. But we're not looking for someone who just wants to learn how to break animals (we've done that too many times). We're looking for a culinary minded individual who is passionate about food- how it tastes, how it's raised, and what it can mean for the people who share it. We feed off of one another's passion for food around here. We're also looking for someone who can check their ego at the door, as we all do a bit of everything here at Left Bank and obviously we'd expect that from any newcomer.
We're looking for an integral part of our team to show up, and we'll hold out until we find the right person. We want to find someone who wants to grow in their role at the shop. We've had past staff wind up becoming part-owners in the shop and that door is not closed to future employees. We're looking for a small, dynamic and fun team to work with everyday.
Some things you should know:
- you may be asked to work an occasional special event in the evening.
- you will be working on the weekends, as is the nature of butcher shops.
- being punctual and focused at work is a requirement (it's weird to have to write that).
- working in the shop is physically demanding
- repetitive tasks are part of butchery, whether it's trimming, packaging, making 60lb of sausage, curing meat, etc. Long before we can be creative, we have to make sure the bacon is made and ready for the case.
- We have a super sweet group at the shop right now, and prize kindness here at the shop. Looking for folks who feel the same way.
- Lastly, Saxapahaw is a small rural community in central North Carolina and the right candidate should plan to be in the general area. It's gorgeous out here in the rolling farmland but we have found that long commutes from surrounding cities eventually become problematic for most who have tried. Something to keep in mind.
