The Mill Glen Arbor is seeking an executive chef to help design, build out and execute a 47- seat café/restaurant on the Crystal River.  Formerly a flour mill built in the 1800s and recording studio in the 1970s, this iconic building has lived many lives and is currently undergoing a major restoration for its next one.

The Mill will reopen its doors with an all day café, gallery/museum and lodging - with a focus on taking care of its guests with the highest regard while creating memorable experiences. The Mill will offer a relaxing and refined atmosphere for discerning guests through design, community and wellbeing principles.

As we begin the final stages of finishing the renovation, we are in search of a culinary professional who identifies with the philosophy of hospitality we seek to redefine. We believe in creating space for the service worker to shine - a reshaping of the guest perspective.

Qualifications

  • At least 4 year’s experience in a senior role in a culinary environment
  • High energy, entrepreneurial spirit, motivational leader, proven track record in high volume property, effective communicator
  • Committed to providing exceptional customer service and associate relations, and ability to improve the bottom line
  • Service oriented style with inventive presentations skills
  • Commitment to quality - consistently upholding and improving defined standards over time 
  • The ability to positively lead others while multitasking and prioritizing workloads. Able to inspire, motivate, and develop a high-performing kitchen team
  • Flexible and willingness to adapt to ongoing changes
  • Professional and confident verbal and written communication with guests, employees, and ownership
  • Excellent organizational skills and attention to detail

Responsibilities

  • The Executive Chef manages and coordinates activities and operations of BOH engaged in preparing and cooking food products; manages all aspects of food purchasing, food preparation, and presentation
  • Developing and maintaining a strong culinary concept for the Mill; creating fresh, seasonal recipes.
  • Spearheading menu planning activities including the determination of purchasing specifications, product, and recipe testing, and menu development
  • Assisting general manager as requested in areas such as special event menu planning
  • Possess and maintain thorough knowledge of wines offered in restaurant and wine/food pairings
  • Ensure all kitchen and food operations are in compliance with all legislated health and licensing guidelines; ensure adherence to all health and safety regulations and procedures
  • Implement and maintain detailed purchase history including product specifications and designated vendor information
  • Hire, train, supervise, and develop kitchen staff - assess and identify team members with management potential
  • Assign duties and manage quality of work
  • Actively work to promote and recognize performance
