FARM
Our animals are raised on our ten thousand acre farm in Northern California's Shasta Valley, where we approach our land management from a holistic perspective. We strive to maximize the health of our pastures, which in turn supports the health of the animals that roam and graze there.  Our animal production includes pastured and free-range beef cattle, pork, lamb, goat, turkey, rabbit, chicken, duck, quail, pheasant and squab.  

BUTCHERY
Belcampo Butchery is opening this fall in Yreka, California to assure humane handling and slaughter for our animals. Just fifteen minutes from our farm, the eight thousand square foot facility will process all our animals in addition to providing custom slaughter and processing for the area's local farmers and ranchers.  

MEAT CO.
Opening late October in Marin Country Mart in Larkspur, CA, Belcampo Meat Co. will be a modern day butcher shop and restaurant utilizing the best of old-fashioned meat and butchery traditions. We will work whole animals and showcase products and techniques that let none of the good stuff go to waste.  Customers will be able to try our products in-store at our casual, meat-focused restaurant.  We intend to open three additional stores in the next 18 months in Northern and Southern California.  

Head In-store Butcher - Marin  
Belcampo Meat Co is looking for a Head Butcher to oversee the butcher counter at our Marin location.  The Head Butcher will be key in promoting the values and mission of our business, specifically with regard to the presentation and quality-assurance of all fresh meats sold at the store.  The Head Butcher will be the face of our butcher department and should be an expert on animal rearing, anatomy, cuts and preparation.  Additionally, the Head Butcher will provide our butchery (processing facility) with feedback regarding customer preference, comments and concerns to help improve our meat product offering at retail.  This position should have excellent customer service skills, as an important part of the job will be interacting with our shoppers.  This position includes full health and dental benefits.  Additionally, all Belcampo employees will take part in a training program designed to provide an in-depth study of meat, from farm to plate.  

Responsibilities include:
  • Track meat inventory and place weekly orders with Store Manager Fill/maintain/organize meat case
  • Hire and manage butcher counter staff
  • Retail cutting (from sub-primals to case-ready) and customer service
  • Exhaustive understanding of cuts and animal rearing process.
  • Quality control for meat products
  • Coordinate with Chef to assure maximum product usage (meat)

Qualifications:
  • 2-3 years retail meat cutting experience (processing facility or grocery a plus) 1-2 years kitchen experience
  • Good working knowledge of beef, pork, lamb anatomy and cuts (including cooking techniques)
  • Excellent customer service skills
  • Interested in meat and sustainable farming education
  • Passionate about meat and whole animal butchery
  • Basic knowledge of organic, sustainable animal care management a plus
  • Positive attitude and ability to pitch in wherever needed an absolute necessity
