Citarella’s Commissary Kitchen in Hunts Point, Bronx is seeking a CHEF DE PARTIE join our culinary team! This role will integrate into the pastry team by assuming responsibility for the cookie area of the pastry department, and ensuring that production and item lists are delegated, completed and assigned according to volume and time requirements.

 

Job Qualifications:

  • Pastry degree preferred
  • Minimum 3- 4 years’ experience in a high quality / volume production environment
  • Minimum 2-3 years’ experience in a pastry leadership role preferred
  • Total understanding of proper pastry methods, techniques and standards
  • Ability to perform multiple tasks at once while working independently
  • Ability to lead a team independently
  • Well versed in pastry kitchen sanitation procedures and food handling certified preferred
  • Ability to use various kitchen equipment
  • Ability to withstand extreme temperatures within the kitchen, refrigerator and freezer environments
  • Able to mathematically adjust recipes; able to read, create, interpret and follow written recipes with precision.
  • Ability to push, pull, lift heavy items more than 50 pounds when needed. Ability to visually inspect, taste and smell product to ensure freshness and quality
  • Ability to communicate effectively with associates/management, clients and vendors when necessary
  • Able to work flexible schedule to accommodate business levels
