Millstone Cellars is hiring for Cellar MasterMillstone Cellars is an American Farmhouse style cidery located in Monkton, Maryland. Founded in 2011 by father and son duo, Curt and Kyle Sherrer, whom began by seeking to blend cider in an old world style using modern day technology and creativity. Using a balance of art and science, all ingredients for the ciders, cysers, and meads are sourced within 150 miles of the Mill, as well as fermented and aged in oak barrels, to create our unique products.
This full-time position will be primarily based out of our warehouse in Cockeysville, Maryland, with some time spent at our Mill in Monkton. While the days/hours are typicallyMonday-Friday 9-5, there will be some flexibility due to harvest time, juice intake, and periodic weekend events.
Cellar Master Roles and Responsibilities include:
Juice Intake- Proper use of pumps for transferring from truck to barrel - Taking Brix/pH tests for any juice or fruit arriving
Fermentation- Yeast hydration and addition to barrels - Some knowledge of yeast (various kinds from Wine to Wild)- Topping up of barrels post fermentation
Barrel Maintenance - Cleaning/Storage - Proper barrel maintenance ranging from sulfuring to fixing leaks- Identifying off characteristics of barrels
Blending/Racking- Racking off of lee's properly, depending on product- Use of gas- Circulating of tanks without aeration - Assisting with blending trials
Bottling/Kegging- Use of both corny and key kegs- Filling both properly - Use of and cleaning of bottler and all connecting parts- Use of filtration device - Making of tap handles
Record Keeping- Filling out production reports for Inventory Database system- Tracking Barrel Inventory - Reporting and planning with Production Manager
General Tasks- Keeping an orderly and clean cellar- Maintenance and cleaning of equipment
Requirements and Responsibilities
- Must be at least 21 years old
- Must have reliable transportation and a license
- Must be comfortable climbing ladders and barrels
- Knowledge of the general fermentation process
- Passionate about the growth of the cider industry and fermentation
- Ability to work in various temperatures and environments
- Ability to move barrels around, and lift at least 55lbs
- Ability to use power tools (saws, drills, pumps, etc)
- Previous experience fermenting, brewing, or winemaking desired- Basic Math skills
- Ability to be flexible, reliable, and able to solve problems efficiently
- Ability to stand on your feet for extended periods of time- Be willing to work independently and take responsibility
- Be enthusiastic, hardworking, and motivated
