Culinary R&D Manager Shake Shack

Job Description The Culinary R&D Manager will support the Culinary Director and Director of Supply Chain with the development of innovative menu items while maximizing quality and production efficiencies for all Shake Shacks.  The ideal candidate will have a mix of multi-unit restaurant culinary operations experience and culinary manufacturing experience by either working directly for a manufacturer or collaborating with the manufacturer’s R&D department.  These experiences must include the project management of moving a concept from bench sample to commercialization resulting in full integration into restaurant operations while demonstrating the ability to work and communicate with internal/external partners. 

Key Responsibilities
  • Lead and manage the research and development process for the Culinary team of new and existing food and beverage menu items and ingredients.
  • Lead the project management of new food and beverage ingredients with suppliers to meet the goals of each project.
  • Support all departments and teams (Operations, Training, Marketing, Supply Chain, and Quality Assurance) with the introduction and launch of new menu items by providing information, instruction and direction on the functionality and handling of the item, ingredient or recipe.
  • Support international franchise partners in the development of new food and beverage menu items for special events or permanent menu placement.
 Skills/Requirements
  • At least 5 years of relevant work experience in food and beverage R&D, quality, or manufacturing
  • Culinary degree
  • Bachelor in Food Science a plus
  • A sense of taste, and an understanding of high end food, and culinary arts
  • A passion for food
  • Knowledge of Contemporary, Regional and Fine Dining trends
  • Knowledge of food trends - past/present/future
  • Knowledge of complete product development process – bench-top through commercial production
  • Sensory analysis experience in a variety of food items
