Le Marais Bistro & Bakery, located at 2066 Chestnut Street in San Francisco’s Marina District, relies on classic traditions and techniques and a shared passion for ingredients that are grown locally and responsibly. In the kitchens at Le Marais, morning to night, a collective of chefs and bakers work with artisanal methods – from the first hours, bakers hand shape and expertly score loaves at the start of a seventeen-hour long fermentation process, while pastry chefs pound down blocks of butter, carefully laminating in layers for traditionally-made viennoiserie dough, which will be featured in the bistro’s desserts along with house-made ice creams. Several local farmers arrive throughout the day with produce and meats, as the chefs begin butchering whole animals, curing fish, preserving ingredients, roasting vegetables on a wood grill, and hand cutting fresh pastas.
The side-by-side bistro and bakery make for one of the more communal and lively eateries in the city. As the San Francisco Chronicle recently reported, “As Bar Tartine and Le Marais attest, the bakery-restaurant is on the rise in San Francisco. It makes sense: We love handmade breads and pastries. We also adore tiny, chef-driven restaurants.” Named after the district known for some of the best Mediterranean food in Paris, Le Marais Bakery has gone on to be listed among the best bakeries in San Francisco by Condé Nast Traveler, San Francisco Magazine, Forbes’ Travel, Fodor’sTravel, EaterSF, Tablehopper.com, 7X7, Tasting Table, SF Bay Guardian, Marina Times, and was recently featured in the Wall Street Journal.
