FARM
Our animals are raised on our ten thousand acre farm in Northern California's Shasta Valley, where we approach our land management from a holistic perspective. We strive to maximize the health of our pastures, which in turn supports the health of the animals that roam and graze there.  Our animal production includes pastured and free-range beef cattle, pork, lamb, goat, turkey, rabbit, chicken, duck, quail, pheasant and squab.  

BUTCHERY
Belcampo Butchery is opening this fall in Yreka, California to assure humane handling and slaughter for our animals. Just fifteen minutes from our farm, the eight thousand square foot facility will process all our animals in addition to providing custom slaughter and processing for the area's local farmers and ranchers.  

MEAT CO.
Opening late October in Marin Country Mart in Larkspur, CA, Belcampo Meat Co. will be a modern day butcher shop and restaurant utilizing the best of old-fashioned meat and butchery traditions. We will work whole animals and showcase products and techniques that let none of the good stuff go to waste.  Customers will be able to try our products in-store at our casual, meat-focused restaurant.  We intend to open three additional stores in the next 18 months in Northern and Southern California.  

Chef –  Marin  
Belcampo Meat Co is looking for a creative, passionate chef to assume the role of Chef.  The Chef will be responsible for all prepared food items at Belcampo Meat Co in Marin with the possibility of advancement as additional stores open in the Bay Area.  This position will work closely with the Belcampo Group management team in executing the company mission via our prepared food offering.  The Chef will be responsible for creating a core menu highlighting Belcampo meats and produce, based in American tradition with an eye towards healthy, delicious eating.  In addition to creating a menu for in-store dining, the Chef will be responsible for developing a value added product line utilizing overages from the meat counter as well as a Grab and Go product line.  This position includes full health and dental benefits.  Additionally, all Belcampo employees will take part in a training program designed to provide an in-depth study of meat, from farm to plate.  

Responsibilities include:
  • Develop menu offering with Belcampo Group for Marin store, including value added products and Grab and Go items; should be adaptable to additional store locations
  • Maintaining and assuring highest level of quality for all prepared food products
  • Coordinate with Head Butcher to assure maximum product usage (meat)
  • Hire, train and manage kitchen staff; manage kitchen scheduling
  • Develop basic meat cooking training for other members of Belcampo Meat Co staff
  • Manage kitchen inventory
  • Purchasing for kitchen via Store Manager
  • Evaluate revenue and loss for prepared foods offering and adjust menu and purchasing as necessary
  • Providing feedback on product (meat) for Belcampo Farms – CA and Belcampo Group, Inc.  
Qualifications:
  • 5+ years chef experience, 2+ years managing a kitchen
  • Robust experience/interest in meat (cooking, butchering, etc)
  • Passionate about organic, natural and good-for-you foods (specifically meat!)
  • Ability to think and use product creatively to maximize product usage
  • Dedicated to positive customer experience through excellent food Works well as part of a team
  • Positive attitude and ability to pitch in wherever needed an absolute necessity
