  • Job Type Full-Time
Job Description Cafe & Butcher Shop Chef
Are you a passionate chef, eager to create delicious meals and prepared foods from local, pasture-raised meats? Are you excited about joining a tight-knit team providing exceptional customer experiences in a town with a vibrant farm-to-table culture? The Meat Market is currently seeking an experienced, enthusiastic and hardworking individual to join our team as a Cafe & Butcher Shop Chef.

The Meat Market is a whole-animal butcher shop and cafe in Great Barrington, MA — Smithsonian Magazine's 2012 Best Small Town in America. We purchase whole animals raised on pasture from small, local farms. We handle the processing of these animals in-house, from old-world butchering to sausage-making and charcuterie, as well as preparing ready-made soups, pies, and all manner of specialty craft items. Our cafe provides simple, delicious lunches and other prepared foods on a daily basis, with an emphasis on the unusual cuts that come from whole-animal butchery.

The responsibilities of our Cafe & Butcher Shop Chef include:
  • Providing excellent lunch service through our cafe — about 30 lunches per day — from a rotating menu of  standard items and daily specials.
  • Preparing a consistent supply of delicious value-added products for sale through our shop, including stocks, soups, prepared foods, pickles, preserves, rendered cooking fats, and more.
  • Ordering and maintaining inventory of all non-meat foods.
  • Providing friendly, enthusiastic and expert service to our customers, including learning about our many fresh cuts and other products to pitch in on the retail side as needed.
  • Assisting with preparation for our catering company, Fire Roasted Catering, as necessary.
Ideal candidates:
  • have significant experience in a professional kitchen.
  • are motivated self-starters, able to handle significant responsibility.
  • are passionate about food, with a drive to learn more and cook creatively.
  • work well in a small, tight-knit team.
  • work quickly, efficiently, and neatly, and take pride in a tidy, clean workspace.
  • are able to meet the physical demands of a job that will require 8+ hour shifts on your feet and occasional lifting of up to 50 lb.
  • will not be squeamish about working with whole animal carcasses.
This position will provide exposure to all aspects of a small, sustainable food business focussed on exceptional quality and service. There will be opportunities for involvement with production, including sausage making, charcuterie production, and more.  Our sister company, Fire Roasted Catering, prepares local, seasonal ingredients entirely on-site for area events, cooking over live wood fire, and there will be opportunities for involvement with this side of our business as well.
